The birth of Torchiato is lost in the different stories that the farmers tell: the most confirmed one tells that more or less around 1600, in the hamlet of Ciser di Fregona, at the foot of Monte Pizzoc, a winemaker had to harvest his grapes even if they were not completely ripe due to an early frost. He harvested the grapes, made space in his barn and laid them on trellises, discovering that this bright and airy place was excellent for the grapes to fully ripen. He did not take much care of the hanging grape bunches and was surprised next spring to find really sweet grapes, but also hard ones from the drying process. He therefore tried to press it several ties as once did not seem sufficient. Then he put the must in small barrels, without being too convinced about it. After a year the first taste lit up the farmer's face who understood he had discovered an extraordinary wine.
